Selon Stephanie Fulton de l&rsquo;Universit\u00e9 de Montr\u00e9al et le Centre de recherche du CHUM, une teneur \u00e9lev\u00e9e en graisses dans l\u2019alimentation perturberait le fonctionnement de la dopamine. En effet les mati\u00e8res grasses de notre nourriture g\u00eaneraient\u00a0les circuits du cerveau qui r\u00e9gulent l\u2019humeur; la suralimentation et la d\u00e9pendance emp\u00eachant de ressentir un sentiment de bien-\u00eatre et le rendant plus r\u00e9sistant au syst\u00e8me de r\u00e9compense.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">L&rsquo;impact des graisses satur\u00e9es<\/h2>\n\n\n\n<p>L\u2019exp\u00e9rience a \u00e9t\u00e9 r\u00e9alis\u00e9e avec de l\u2019huile de palme et de l\u2019huile d\u2019olive et montre que cette fonction est affect\u00e9e lors d\u2019utilisation de graisses satur\u00e9es.<\/p>\n\n\n\n<p>Les rats lors de cette \u00e9tude ont \u00e9t\u00e9 divis\u00e9s en trois groupes et soumis \u00e0 trois <strong><a href=\"\/conseils\/nutrition\/programmes-alimentaires\/\">types de r\u00e9gimes<\/a><\/strong>, tous \u00e0 base de 50% de graisses mais d\u2019origines diff\u00e9rentes&nbsp;; l\u2019un recevant \u00e0 proportion \u00e9gales des graisses satur\u00e9es et des graisses mono-insatur\u00e9es, le second recevant une alimentation compos\u00e9e \u00e0 50% d\u2019huile d\u2019olive et le troisi\u00e8me, 50% de ses calories d\u00e9riv\u00e9es de l\u2019huile de palme. Il n\u2019y avait pas d\u2019autre modification du r\u00e9gime au plan des sucres et des prot\u00e9ines, les sujets \u00e9tant libres de manger autant qu\u2019ils le souhaitaient. Apr\u00e8s 8 semaines d\u2019\u00e9tudes, le poids, la glyc\u00e9mie des rats, ni m\u00eame le taux de leptine, ou d\u2019insuline n\u2019avait pas \u00e9volu\u00e9 de fa\u00e7on diff\u00e9rente, preuve que les hormones m\u00e9taboliques n\u2019\u00e9taient pas sp\u00e9cialement affect\u00e9es.<\/p>\n\n\n\n<p>Par contre au plan biochimique, des tests ont \u00e9t\u00e9 pratiqu\u00e9s et ont mis en \u00e9vidence que les rats soumis au r\u00e9gime huile de palme avaient perdu en efficacit\u00e9 au niveau du fonctionnement du syst\u00e8me de la dopamine, impliqu\u00e9 dans la r\u00e9compense et la recherche de celle-ci. Un peu comme si, &nbsp;\u00e0 l\u2019image de ces drogu\u00e9s qui recherchent des sensations de plus en plus fortes, ils avaient un besoin de plus en plus fort, de consommer de graisses afin d\u2019obtenir un sentiment de bien-\u00eatre suffisant. Ce type de conduite&nbsp;pousse \u00e0 consommer toujours plus de graisses ou de sucres pour ressentir cette sensation de r\u00e9compense, ce qui entraine un probl\u00e8me de comportement qui modifie les perceptions.
