Pour rappel nous avions \u00e9voqu\u00e9 la biodisponibilit\u00e9 des prot\u00e9ines en expliquant que les v\u00e9g\u00e9taux (\u00e0 part le quinoa, pois, soja ) ne contenaient pas les 9 acides amin\u00e9s essentiels qui permettent une assimilation compl\u00e8te des prot\u00e9ines. La biodisponibilit\u00e9 repr\u00e9sente donc la quantit\u00e9 d\u2019un nutriment que votre organisme est capable d\u2019assimiler. Dans le cas des prot\u00e9ines v\u00e9g\u00e9tales, leur biodisponibilit\u00e9 faible implique une tr\u00e8s faible quantit\u00e9 de prot\u00e9ines assimil\u00e9es.<\/strong><\/p>\n\n\n<h2 class=\"has-number\">La prot\u00e9ine des v\u00e9g\u00e9tariens <\/h2>\n\n\n<div class=\"columns-push-product\">\n  <div class=\"columns-push-product__body\">\n    \n\n<p class=\"has-large-font-size\"><\/p>\n\n\n  <\/div>\n  <div class=\"columns-push-product__product\">\n      <\/div>\n<\/div>\n\n\n\n<p>Un autre \u00e9l\u00e9ment essentiel non seulement \u00e0 une bonne sant\u00e9 mais \u00e9galement aux <strong>performances sportives<\/strong> est le fer. En effet le fer entre dans la composition de l\u2019h\u00e9moglobine &nbsp;et d\u00e9termine l\u2019oxyg\u00e9nation des tissus. L\u2019oxyg\u00e8ne permet \u00e0 vos cellules de vivre et est \u00e0 la base de l\u2019am\u00e9lioration des performances athl\u00e9tiques.<\/p>\n\n\n\n<p>On distingue 2 types de fer, le fer h\u00e9minique et le fer non h\u00e9minique, le premier est utilis\u00e9 par l\u2019organisme pour produire des globules rouges, le deuxi\u00e8me pour constituer des r\u00e9serves en cas de carence vitale. Les principales sources de fer h\u00e9minique sont d\u2019origine animale (viandes rouges de pr\u00e9f\u00e9rence, abats comme le foie, poissons \u2026), les v\u00e9g\u00e9taux ne contenant que du fer non h\u00e9minique. Mais pourquoi l\u2019organisme n\u2019utilise que le fer h\u00e9minique pour synth\u00e9tiser l\u2019h\u00e9moglobine&nbsp;? C\u2019est encore une fois une question de biodisponibilit\u00e9&nbsp;!<\/p>\n\n\n\n<p>La biodisponibilit\u00e9 du fer d\u2019origine animale est de 10 \u00e0 30% alors que la biodisponibilit\u00e9 du fer contenu dans les v\u00e9g\u00e9taux est de 1 \u00e0 5%.
