Les chercheurs ont compar\u00e9 deux types de <strong>petit d\u00e9jeuner \u00e0 teneur faible ou \u00e9lev\u00e9e en prot\u00e9ines<\/strong> administr\u00e9s \u00e0 deux groupes de sujets pour essayer de savoir si ceux-ci avaient ou non une influence sur leur comportement.<\/p>\n\n\n\n<p>Les prot\u00e9ines d\u2019origine animale apportent de la <a href=\"https:\/\/www.fitadium.com\/conseils\/acides-amines\/tyrosine\/\">tyrosine<\/a> en quantit\u00e9 importante, ce qui n\u2019est pas toujours le cas des prot\u00e9ines v\u00e9g\u00e9tales. Or on sait que la tyrosine est un pr\u00e9curseur de la dopamine, hormone qui conditionne le bien-\u00eatre. Des <strong>teneurs en prot\u00e9ines<\/strong> plus ou moins \u00e9lev\u00e9es peuvent influencer les niveaux de tyrosine et donc de dopamine dans le cerveau. C\u2019est le cas par exemple du tryptophane.<\/p>\n\n\n\n<p>Le petit d\u00e9jeuner modifie l\u2019arriv\u00e9e du <a href=\"https:\/\/www.fitadium.com\/conseils\/acides-amines\/tryptophane\/\">tryptophane<\/a> dans le sang apr\u00e8s la prise alimentaire, ce qui montre que les macronutriments ing\u00e9r\u00e9s ont une influence. Notamment les chercheurs ont constat\u00e9 qu\u2019en pr\u00e9sence d\u2019un petit d\u00e9jeuner \u00e9lev\u00e9 en glucides et faible en prot\u00e9ines, le taux de tryptophane est plus \u00e9lev\u00e9.<\/p>\n\n\n\n<p>Dans le m\u00eame groupe, on a \u00e9galement observ\u00e9 des taux de tyrosine bien plus faibles en pr\u00e9sence de glucides.<\/p>\n\n\n\n<p>Le taux de sucre sanguin est \u00e9galement d\u00e9termin\u00e9 par la prise de glucides au petit d\u00e9jeuner. Il est plus haut avec un petit d\u00e9jeuner \u00e0 charge glucidique \u00e9lev\u00e9e et plus bas avec un petit d\u00e9jeuner \u00e0 faible charge glucidique.<\/p>\n\n\n\n<p>Or la pr\u00e9sence de glucides au petit d\u00e9jeuner favorise l\u2019absorption du tryptophane au d\u00e9triment de la tyrosine. Or comme le tryptophane est plus rare dans l\u2019alimentation que la tyrosine, il est prioritaire dans l\u2019assimilation. Les deux \u00e9tant li\u00e9s, un manque de tyrosine inhibera le passage du tryptophane.<br>\nIl est donc prouv\u00e9 par cette \u00e9tude que <strong>le ratio entre les glucides et les prot\u00e9ines<\/strong> dans la ration alimentaire peut influencer l\u2019assimilation soit du tryptophane, soit de la tyrosine.<\/p>\n\n\n\n<p>En pr\u00e9sence de glucides, l\u2019insuline augmente ainsi que le cortisol, court-circuitant l\u2019effet de la dopamine en br\u00fblant la tyrosine pour en faire de l\u2019\u00e9nergie, ce qui l\u2019emp\u00eache d\u2019\u00eatre assimil\u00e9e puis transform\u00e9e en cat\u00e9cholamine.<\/p>\n\n\n\n<p>C\u2019est le matin que la tyrosine est le mieux assimil\u00e9e. C\u2019est pourquoi il est recommand\u00e9 de <a href=\"\/4-proteines\"><strong>prendre un petit d\u00e9jeuner et un d\u00e9jeuner riche en prot\u00e9ines animales<\/strong> <\/a>et faible en glucides pour profiter&nbsp; d\u2019un apport optimal de tyrosine au moment o\u00f9 notre corps le r\u00e9clame et sait le mieux s\u2019en servir. La tyrosine pr\u00e9curseur de dopamine, hormone qui&nbsp; invite \u00e0 l\u2019action, suscite l\u2019envie, motive, aide \u00e0 la vigilance et \u00e0 la concentration \u2026 ce qui met en train pour la journ\u00e9e mais elle permet \u00e9galement de garder des nerfs d\u2019acier parce qu\u2019elle est impliqu\u00e9e dans le syst\u00e8me de la r\u00e9compense.<\/p>\n\n\n\n<p>Au contraire, l\u2019apr\u00e8s-midi et le soir sont les bons moments pour faire le plein de tryptophane (qui freine l\u2019action).
