Prenez l\u2019exemple des fruits et l\u00e9gumes congel\u00e9s, ils ont \u00e9t\u00e9 congel\u00e9s dans les 24h suivant leur r\u00e9colte et en ont donc toutes les propri\u00e9t\u00e9s. Le froid (bien en dessous de 0) stoppant la prolif\u00e9ration bact\u00e9rienne et la d\u00e9gradation mol\u00e9culaire, le fruit surgel\u00e9 conservera pendant des semaines ses valeurs nutritionnelles. Sachez, qu\u2019au bout de deux jours dans le bac \u00e0 l\u00e9gumes, un fruit frais aura, quant \u00e0 lui, perdu la moiti\u00e9 des vitamines qu\u2019il contient.
