Faire fondre le chocolat noir coup\u00e9 en petits morceaux au bain-marie.&nbsp;Lorsque le chocolat \u00e9paissit l\u00e9g\u00e8rement et brille, il est pr\u00eat.<\/p>\n\n\n\n<p>De pr\u00e9f\u00e9rence, il vaut mieux avoir un moule souple en forme de coque. Sinon, on peut faire \u00e7a \u00e0 l\u2019int\u00e9rieur d\u2019un bol, \u00e7a fera l\u2019affaire \u00e9galement ! Il ne faut pas graisser le moule. La vraie technique des p\u00e2tissiers demande un chocolat temp\u00e9r\u00e9 fondu \u00e0 50\u00b0, refroidi rapidement. Dans ce cas, le chocolat se r\u00e9tracte en cristallisant et se d\u00e9tache tout seul. Sans \u00e7a, le d\u00e9moulage sans casse est un peu compliqu\u00e9. Il y a aussi la technique, bien plus simple, du ballon gonflable&#8230;<\/p>\n\n\n\n<h3>Etape 2<\/h3>\n\n\n\n<p>Verser une premi\u00e8re couche de chocolat fondu dans le moule, r\u00e9server au frais 20 min.
