Cette \u00e9tude men\u00e9e sur des bovins et des souris et sur des cellules de cartilage humain a d\u00e9montr\u00e9 que les sujets test\u00e9s pr\u00e9sentaient moins de sympt\u00f4mes d&rsquo;arthrose et de l\u00e9sions du cartilage que leur cong\u00e9n\u00e8res. Ce composant sulforaphane, pr\u00e9sent dans la plupart des crucif\u00e8res, donc tous les choux, mais particuli\u00e8rement dans le brocoli, emp\u00eache l&rsquo;inflammation des articulations et par l\u00e0-m\u00eame la destruction du cartilage.
