Les micro-particules de cette prot\u00e9ine imitent le comportement de la mati\u00e8re grasse utilis\u00e9e dans la fabrication d\u2019aliments.<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Un prot\u00e9ine qui imite la graisse<\/h2>\n\n\n\n<p>Cette technique \u00e9tait d\u00e9j\u00e0 utilis\u00e9e dans la fabrication des yaourts, du lait ou de la cr\u00e8me mais ne fonctionnait pas jusqu\u2019\u00e0 pr\u00e9sent pour les p\u00e2tisseries et les fromages. &nbsp;L\u2019\u00e9quipe de chercheurs de l&rsquo;Universit\u00e9 de Heriot-Watt et de l&rsquo;Universit\u00e9 d&rsquo;Edimbourg&nbsp;a enfin compris comment <a href=\"\/4-proteines\"><strong>ces prot\u00e9ines<\/strong><\/a> se comportaient face \u00e0 la chaleur et autres process de fabrication et est parvenue \u00e0 <strong>cr\u00e9er une prot\u00e9ine qui imite parfaitement la graisse<\/strong>. La vraie nouveaut\u00e9 c\u2019est que ces produits all\u00e9g\u00e9s \u00e0 base de cette prot\u00e9ine restent app\u00e9tissants et tr\u00e8s proches des vrais, du point de vue de la texture et du go\u00fbt. Ceci pourrait repr\u00e9senter un progr\u00e8s consid\u00e9rable pour ceux qui ont du mal \u00e0 <strong>suivre un r\u00e9gime alimentaire<\/strong> en raison des privations.
