Oui, mais voil\u00e0 : les frites sont les aliments pr\u00e9f\u00e9r\u00e9s des enfants, le steak-frites est le plat principal choisi au restaurant du midi par les salari\u00e9s qui d\u00e9jeunent dehors et le menu-cl\u00e9 de la restauration rapide ! En Anglais, on appelle les frites les \u00ab french fries \u00bb c&rsquo;est dire comme c&rsquo;est une habitude purement fran\u00e7aise !<\/strong><\/p>\n\n\n<h2 class=\"has-number\">Des frites, des frites, des frites : Non ! <\/h2>\n\n\n<div class=\"columns-quote is-\">\n  <div class=\"columns-quote__quote\">\n    <blockquote>Les frites ont un IG tr\u00e8s \u00e9lev\u00e9<\/blockquote>\n  <\/div>\n  <div class=\"columns-quote__body\">\n    \n\n<p class=\"has-large-font-size\">\n\nNon seulement les frites ont un IG (Index glyc\u00e9mique) tr\u00e8s \u00e9lev\u00e9 (voir notre dernier article du blog sur les IG), mais en plus elles contiennent des acides gras-trans, \u00e0 cause de l&rsquo;huile de friture, qui sont n\u00e9fastes pour la sant\u00e9, car ils \u00e9l\u00e8vent le mauvais cholest\u00e9rol.\n\n<\/p>\n\n\n  <\/div>\n<\/div>\n\n\n\n<p>Derni\u00e8rement, elles sont accus\u00e9es d&rsquo;apr\u00e8s une \u00e9tude, d&rsquo;augmenter le risque de cancer. C&rsquo;est vrai en ce qui concerne les frites surgel\u00e9es et pr\u00e9cuites (qui constituent l&rsquo;essentiel des frites servies en restauration et \u00e0 la maison), mais pas sur les frites maison. Les frites surgel\u00e9es et les chips contiendraient de l&rsquo;<strong>acrylamide<\/strong>, pr\u00e9sent en grande quantit\u00e9 dans les aliments transform\u00e9s.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote\"><p>Les proc\u00e9d\u00e9s de fabrication utilis\u00e9s par les industriels pour les aliments congel\u00e9s pr\u00e9cuits ou cuits \u00e0 tr\u00e8s haute temp\u00e9rature, sont mis en cause <\/p><\/blockquote>\n\n\n\n<p>Cette substance l&rsquo;<strong>acrylamide<\/strong> se lib\u00e8rerait dans ces conditions pr\u00e9cises de cuisson \u00e0 haute temp\u00e9rature. Les \u00e9tudes men\u00e9es par les chercheurs de l&rsquo;Universit\u00e9 de Reading et de Leeds (au Royaume Uni) ont confirm\u00e9 que les pommes de terre expos\u00e9es \u00e0 des temp\u00e9ratures \u00e9lev\u00e9es, puis trait\u00e9es avec du glucose produisent bien de l&rsquo;acrylamide.<br>Le lien entre l&rsquo;acrylamide et cancer n&rsquo;a toutefois pas \u00e9t\u00e9 d\u00e9montr\u00e9, mais la Food Standards Agency poursuit ses recherches. En attendant les conclusions d\u00e9finitives, la FSA conseille de ne pas cesser d&rsquo;en consommer, mais d&rsquo;int\u00e9grer les frites et autres aliments incrimin\u00e9s \u00e0 une alimentation saine et \u00e9quilibr\u00e9e, sans toutefois en abuser.
